All right, friends.  I'm pretty excited to share this recipe.  I've made a lot of variations of energy bites that we eat regularly around here, but this recipe is one of my favorites because 1)it is nut free which means we can enjoy nuts for another snack in the day 2) it incorporates some incredibly nutritious seeds3) the only binder keeping it all together is coconut oil with its amazing health benefits for kids4) it is lightly and naturally sweetened with just dates, dried cranberries, and a little dark chocolate 5) they can be enjoyed in minutes--no baking!

These little energy bites are festive with their red (cranberries) and white (unsweetened coconut) flecks and much firmer consistency (after being refrigerated a bit) then many other energy bites I've made.  And best of all, all of my kids love them.  These are awesome as a mid-morning or afternoon snack, packed up for lunches, packed up for a hike or outdoor sport, or even served on a platter for a party!

Why I use coconut oil daily for my kids and family:

  • Coconut oil is over 40% lauric acid.  Lauric acid, also found in human breastmilk, converts to Monolaurin which increased immunity in fighting viruses and disease.
  • Coconut oil is a medium chain fatty acid (MCFA) which means it is easily digested and sent right to the liver for energy production.
  • It increases the metabolism and give the body an instant source of energy.  (I like put it in something before I workout and to keep my metabolism up.)
  • It boosts brain function incredibly well and is becoming a new solution for many cognitive deficits.
  • Is considered the best brain food.  Period.

These energy bites are so perfect for children.  It gives them a daily dose of coconut oil mixed inside something really yummy, natural, and packed with energy.

3-seed coconut berry energy bites (nut free, grain free, dairy free)

Makes 20 energy bites

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/4 cup sunflower seeds
  • 1/8 cup chia seeds
  • 1/8 cup sesame seeds
  • 4 dates
  • 4 TSBP coconut oil, melted
  • 4 TBSP dried cranberries (or cherries or blueberries)
  • 2 TBSP dark chocolate chip (or dark chocolate shavings)
  • *more unsweetened shredded coconut for coating

 (Feel free to switch out any of the seeds for other needs you may have in your pantry.)

Nutrition per energy bite:

Mix shredded coconut, seeds, and dates in a food processor until finely ground.  Add melted coconut oil, cranberries, and dark chocolate.  Process until finely ground as seen above.  (This pic is before I processed the dark chocolate.)

Scrape batter into a small bowl and refrigerate for at least 30 minutes.  The reason you chill it is so the coconut oil will solidify a bit so you can form the batter into balls.

Now for the fun part.  Gather the kiddos, aprons, and individual bowls of extra unsweetened shredded coconut.

Form small balls by hand.  Because you're working with coconut oil, it will try to liquify with the heat from your palms.  Just pack the balls tightly by hands and toss them in your child's coconut bowl.  Let them roll the energy bite to cover in coconut.

Once they are all rolled and coated in coconut, store them in the refrigerator.  We eat half of them right after they are made but they actually firm up beautifully after being in the fridge for a bit.  If you want them for lunches, on the road, or for pre-workout energy snacks, the firmness is really nice from being in the fridge for even just 5-10 minutes.
