Here is something special to start out your week: blueberry butter.  It is perfect for english muffins, bagels, toast, or even crackers.  It takes about 5 minutes to make, too!

Blueberry Butter

2 sticks of unsalted butter, slightly softened

2/3 c. fresh blueberries, coarsely shopped

3 TBSP your choice of sweetener (or use honey for honey butter)

Combine all ingredients in food processor until mixture is well blended and fluffy.  Transfer to crockery butter bell or small ceramic bowl and chill before serving.  Store in refrigerator.
