Here is our little specialty around here: smoothies.
I call them smoothies but sometimes they are more indulgent like a milkshake--without the ice cream. Our smoothie of preference changes from time to time, but this banana coco-nutty smoothie has stuck around as one that requires double batches from the kids.
banana coco-nutty smoothie
Two large handfuls of ice (12 + ice cubes)
2-3 ripe bananas
1 1/2 TBSP almond butter
1/4 tsp pure vanilla
shake of cinnamon
2 TBSP unsweetened flaked coconut
1-2 cups milk or almond milk, or a combination of the two
Add all of the smoothie ingredients to your blender, ice first. Add enough water or milk so that the liquid measures about halfway up the ice and bananas in the blender. (If you want it more milkshake-like, use only milk and no water.)
Blend until smooth. Pour into glasses and top with chia seeds and more flaked coconut. Chia seeds aren't meant to be blended--they are best topping off the smoothie. (They are an incredible source of Omega-3 that my kids are just used to seeing on top of their smoothies.)

It is an awesome ending to a day when I'm craving something a bit sweet and satisfying before bed. This recipe, sometimes with just ice, banana, a handful of baby carrots or spinach, and protein powder is excellent after a workout.
